Drywall is a sheet material made of gypsum plaster covered in thick paper, cut into sheets of 4 ft. X 8 ft. or 4 ft. X 12 ft. The sheets are nailed or screwed to wall framing, then the seams are taped so the walls look seamless. Some drywall then has a texture applied to the walls and/or ceiling. Alternately, walls are plastered with a wet plaster installed over wood lathe or other surface. The plaster is hand-contoured, then dries. Plaster contractors are a specialty and more difficult to find.
